GEOLOGY
Marnes sombres feuilletées et calcaires du Lias.


VARIETIES
Carignan and Syrah.



WINEMAKING
Carbonic maceration is practiced on the Carignan while the Syrah follows a more classic vinification with destemming. The vatting lasts three weeks. After blending, the alcoholic fermentation ends in French oak barrels. Aging lasts twelve months.


SERVING TEMPERATURE
Between 15 °C and 18 °C.



TASTING
EYE: dark red.
NOSE: elegant, slightly vanilla, offers aromas of prune that give way to some scents of thyme and juniper.
MOUTH: jammy plum flavors with hints of vanilla and garrigue. Rather supple tannic structure.


WINE & FOOD PAIRING
Cassoulet, lamb shoulder with thyme.
